Pb&J Chia Pudding
Looking for a breakfast you can make the night before so you can grab it and go? Look no further! This chia pudding is packed with 43 grams of protein, omega 3s, fiber, calcium, iron, potassium and vitamin C. What more could you ask for!?
I’m calling these PB&J chia pudding because the peanut butter powder in pudding gives it that peanut butter based, and the strawberries on top are meant to the the “jelly” or “jam”. You could substitute this with actual jam, make your own jam by mashing up your favorite berries, or just top with fresh fruit like I did here.
Ingredients
1 scoop vanilla protein powder
4 tbsp chia seeds
1/2 cup soy milk
1/4 cup water
1/2 tsp Vanilla extract
1/2 tbsp agave
1.5 tbsp peanut butter powder
1/4 cup vegan yogurt
1/2 cup sliced/diced strawberries
Directions
In a blender, combine the chia seeds, peanut butter powder, water, milk, vanilla, and agave and blend together.
Pour this mixture into a jar and top with vegan yogurt and strawberries.
Set in your fridge overnight, or at least for 2-3 hours to thicken.
Pull out of the fridge in the morning and serve it as it is :)
