High Protein Banana Waffles

These high protein waffles are so good and they don’t even have protein powder in them! They’re so easy to make, have 30 grams of protein and are packed with fiber and have calcium, iron, potassium and vitamin C! We love to pack in those micronutrients! Ingredients

* 45 grams Buckwheat flour

* 30 grams Vital wheat gluten (you can find this at most groceries stores, but i buy it in bulk from amazon to save $$$, I’ll link it here)

* 1 tbsp Brown sugar or a zero calorie sweetener like stevia or monk fruit sweetener

* 1/2 tsp baking powder

* 1/2 tsp baking soda

* Pinch of salt

* 1/2 tsp cinnamon

* 1/2 cup water (add more as needed) or substitute with your favorite plant based milk

* 1 Banana, mashed plus more as a topping if you want, or top with berries

* 2 tbsp non dairy yogurt

* 1 tsp apple cider vinegar

Directions

1. Combined all the dry ingredients in a medium bowl or blender and mix them together

2. Add in the rest of the ingredients and mix until evenly combined (if you are doing it in a bowl, make sure you mash your banana)

3. Pour the mixture into a greased waffle iron and cook for about 5 minutes or until your waffle iron lights up to tell you your waffles are done.

4. Take out and serve immediately or toast them in your toaster later (that’s what I did haha) and top with toppings of your liking :) I like to do PBFit and berries
