Curry Noodle Stew
I’ve been making this curry recipe for years and i finally made a high protein version!
I also never tried curry until I finally went vegan, and its SO GOOD. If you havent tried curry before, you’re truely missing out.
Try this high protein curry stew that will provide you with loads of protein, fiber and micronutrients :)
High protein meals do not have to be boring and bland! They can still be colorful and delicious like this recipe.
Ingredients:
- 1 onion, diced
-2-4 stocks of carrots, diced
- 2-4 stocks of celery diced
- 1 pepper, diced
- 1 tsp garlic
- 1 tsp ginger
- 2-4 cups vegatable broth (depending on how thick you like it)
- 1 can of chickpeas, drained and rinsed
- 1 can of coconut milk
- 1 box of chickpea or lentil pasta
- 1 tsp curry powder
- 1/4 tsp turmeric
- 1/2 tsp cumin
- 1 tsp apple cider vinegar
- 1 block of super firm tofu
- 2 tbsp tamari
- 5 tbsp nutritinal yeast
- 2 bay leaves
-1 tbsp olive oil
- green onions, parsley or cilantro to garnish
Directions
Heat your 1/2 tbsp oil in a large pot and then add in your onion, carrots , celery and pepper and cook for 5 minutes
Add in your garlic, ginger and spices. And cook for another minute
In a separate pan, heat the other 1/2 tbsp of olive oil and crumb in your tofu
