Vegan & Gluten Free Rice Crispy Treats

Rice crispy treats were such a delicious and nostalgic snack from my childhood but they aren’t vegan, OR GLUTEN FREE? I decided i had to make a vegan and gluten free version so my fellow vegan’s and gluten free friends can try them and i put a little high protein spin on them by throwing in some of my favorite Vedge Nutrition Protein Powder. Ingredients

  • 1.5 tbsps coconut oil

  • 10 oz container of Dandies Vegan Marshmallows

  • 2 scoops Vanilla Protien Powder (about 1 cup)

  • 4 cups Puffed Rice Cereal

Directions

  1. Melt coconut oil over medium heat in a pot on the stove

2. add in marshmallows and stir continuously until they have melted and are no more lumps

3. As this get nearly completely smooth, add in your protein powder and mix in evenly.

4. Add in the puffed rice and coat in the marshmallow mixture

5. Line a 9x13 container with parchment paper and pour the mixture in. Use a spatula to flatten out and place in the fridge for 1-2 hours.

6. Cut into 12 pieces and eat immediately or store up to 10 days in your fridge.

For the best taste and texture, throw them back in the microwave for 30 seconds before eating (so much better, soft and gooey)
