Protein Sugar Cookie
On this night my boyfriend and I were feeling like something soft and sweet but I still needed more protein to hit my protein goal for the day. I decided to try out a soft protein cookie.
Ingredients
Cookie:
1/2 cup gluten free baking powder
1/4 cup powdered sugar
1 scoop Vanilla Ice Cream Protein Powder (code VONNY)
1 tsp baking powder
1 tsp baking soda
2 tbsp flaxmeal
1/4 cup soy milk
2 tbsp vegan butter, softened
1 tsp vanilla extract
Icing:
1/4 cup vegan yogurt
1 tsp vegan sugar free jello
2 tbsp powdered sugar
Sprinkles (optional)
Directions
In a large bowl combine the dry ingredients; flour, sugar, protein powder, baking powder, and baking soda; and whisk together.
In a small bowl or cup add the flaxmeal and 1/4 cup of water and let sit for 5 minutes.
Add the vegan butter, soy milk, vanilla extract and flax mixture into the dry ingredients. Use a spatula to mix this until. evenly combined
Form the dough into 4 large or 8 small cookies and put on a parchment paper lined baking sheet.
Bake in the oven at 350 for 11-13 minutes.
While the cookies bake, begin making the icing by combining the yogurt, vegan sugar free jello, and powder sugar in a small bowl. Whisk this until smooth. Allow this to sit for about 10 minutes.
Remove the cookies from the oven and allow to cool for at least 5 minutes.
Use a spoon to put the frosting on the cookies and use the bottom side of the spoon to spread it across evenly.
Add your sprinkles if you want and enjoy!
