Protein Sugar Cookie

On this night my boyfriend and I were feeling like something soft and sweet but I still needed more protein to hit my protein goal for the day. I decided to try out a soft protein cookie.

Ingredients

Cookie:

  • 1/2 cup gluten free baking powder

  • 1/4 cup powdered sugar

  • 1 scoop Vanilla Ice Cream Protein Powder (code VONNY)

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 2 tbsp flaxmeal

  • 1/4 cup soy milk

  • 2 tbsp vegan butter, softened

  • 1 tsp vanilla extract

Icing:

  • 1/4 cup vegan yogurt

  • 1 tsp vegan sugar free jello

  • 2 tbsp powdered sugar

  • Sprinkles (optional)

Directions

  1. In a large bowl combine the dry ingredients; flour, sugar, protein powder, baking powder, and baking soda; and whisk together.

  2. In a small bowl or cup add the flaxmeal and 1/4 cup of water and let sit for 5 minutes.

  3. Add the vegan butter, soy milk, vanilla extract and flax mixture into the dry ingredients. Use a spatula to mix this until. evenly combined

  4. Form the dough into 4 large or 8 small cookies and put on a parchment paper lined baking sheet.

  5. Bake in the oven at 350 for 11-13 minutes.

  6. While the cookies bake, begin making the icing by combining the yogurt, vegan sugar free jello, and powder sugar in a small bowl. Whisk this until smooth. Allow this to sit for about 10 minutes.

  7. Remove the cookies from the oven and allow to cool for at least 5 minutes.

  8. Use a spoon to put the frosting on the cookies and use the bottom side of the spoon to spread it across evenly.

  9. Add your sprinkles if you want and enjoy!
