Mint Oreo Protein Truffles

If you’re looking for a dessert that still packs a protein punch, you need to try these truffles.

Ingredients

  • 2.5 cups rolled oats

  • 6 tbsp maple syrup

  • 6 oreos

  • 2 scoops vanilla mint protien powder (My Protein)

  • 13 tbsp peanut butter

  • 1 tbsp cocoa powder

  • 1 tsp peppermint extract

  • 1/3 cup chocolate chips

  • 1 tbsp coconut oil

Directions

  1. Put all of the ingredients, except the chocolate chips and coconut oil in a food processor and blend for 3-5 minutes until smooth.

  2. Line a cookie sheet with parchment paper.

  3. When the chocolate is melted, take the food processor mixture and take about 1 tbsp of mix with a spoon and form into balls. Do this until you’ve used up all of the mixture.

  4. In a microwave save bowl, combine the chocolate chips and coconut oil ad melt in the microwave in 10 second increments, mixing in between. until fully melted.

  5. Now take each ball and coat in chocolate by using a fork and spatula. Place each ball covered in chocolate on the parchment paper. Repeat with each ball.

  6. When you have coated all of the energy balls, put them in the freezer for 10-15 minutes to harden

  7. Eat immediately or store in your fridge in an air tight container for up to 10 days.
