Double Mint Chocolate Chip Overnight Oats
I don’t know about you, but I am a mint ice cream girly. I used to die for mint oreo ice cream, but sadly ice cream for breakfast is a little frown upon. But luckily for us! I made a Double Mint Chocolate Chip Oats recipe so we can still have the best of both worlds. You’re only going to need 8 Simple ingredients, and you probably already have most of them at home already. The one thing you’re probably going to have to go out and buy is Peppermint Extract. This is what will give us that delicious minty flavor. You can find this at most groceries stores in the baking isle where the vanilla extract is.
I also prefer to use Vedge Nutrition protein powder for this recipe because I think it is the best tasting vegan protein there is (and I’ve tried a lot! I still try new ones and keep coming back). And not only does it taste good, but it’s 100% vegan, certified organic, and 3rd party tested.
But anyways! Lets get into the recipe
Ingredients
1/2 cup rolled oats
1 tbsp chia seeds for flaxseeds
1/2 tbsp liquid sweetener (I prefer agave)
1/2 peppermint extract
1/4 cup vegan yogurt
1/2-3/4 cup vegan milk or water (up to your consistency preference) (i prefer soy milk but its up to you)
1 scoop Vedge Nutrition Chocolate Protein Powder (code VONNY to save $$$)
1 tbsp vegan chocolate chips
Directions
In a bowl, jar, or Tupperware, combine all of the ingredients (save a few chocolate chips to sprinkle on top) and mix together until evenly combined.
Cover and set in your fridge overnight.
In the morning, eat them cold or pop them in the microwave for 1.5-3 minutes. If you want them to truly taste more like ice cream, eat them cold. I thought 1.5 minutes in the microwave was the perfect temp for me.
